Elderberry Syrup

We went for a walk last weekend looking for elderberries.  Most of them were over-ripe but right at the end of the walk we found a whole row of trees with perfect berries which I've

turned into Elderberry Syrup (usually know as Elderberry Rob).  I make this every year, it makes a lovely hot cordial to take when I feel as if a cold/flu are starting.  It has anti-viral properties and speeds up recovery. You can add your favourite spices eg ginger or chilli - warming, cloves, nutmeg, cinnamon or even some orange juice or alcohol!

If you are collecting berries, make sure you avoid the green berries.  The berries and juice should not be eaten raw; cook them first.  You can use them to make elderberry syrup, wine or jelly.
